This reduces the acidity of the finished cheese, giving Waterloo its characteristic mildness and beautifully rounded flavour. As it ripens, the texture becomes increasingly soft and yielding beneath the rind, while the centre retains a little freshness.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThe cheese takes its name from the Duke of Wellington's estate, where the Guernsey milk used to make Waterloo was originally sourced. Today, it is produced by Village Maid Cheese using milk from a single Guernsey herd near Henley-on-Thames.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eVillage Maid was founded in 1986 by Anne and Andy Wigmore, following Anne's decade working in microbiology and cheesemaking at the National Institute for Research in Dairying.
