vecchia-latteria
Vecchia Latteria

Vecchia Latteria comes from the province of Treviso in Veneto, in north-eastern Italy. The name translates roughly as “old dairy”, a nod to the latteria tradition of northern Italy, where dairies brought together local milk to make firm cheeses designed to mature well and develop character over time.

Made from cow’s milk, the curd is cooked, pressed and brine-salted before the wheels are left to mature. Guffanti ages Vecchia Latteria for around 24 months, by which point the paste has become firm and straw-yellow, with only a scattering of small eyes and the dense, satisfying texture of a properly matured cheese.

Time brings real complexity. The flavour begins with sweet, rich milk before moving into toasted nuts, ripe fruit and deeper savoury notes, finishing with an aromatic warmth and a touch of spice. Guffanti’s own tasting notes reference red berries, chestnut honey and dark, unfiltered beer, which gives a good sense of the cheese’s combination of sweetness, fruit and depth.

Each wheel is selected by Luigi Guffanti 1876 on behalf of Paxton & Whitfield, drawing on generations of experience in choosing cheeses that reward long maturation.
