Whipped Barrel Aged and Hot Honey Dip

Whether you're in search of a mouth-watering accompaniment for cocktails in the sunshine or a delightful alfresco appetiser, this recipe is sure to please. It's quick and incredibly easy to prepare. The salty Barrel Aged cheese transforms into a velvety, creamy dip, while the Acacia Honey is infused with garlic and a hint of chilli. Present a generous bowlful of this moreish dip alongside our irresistible Sourdough Crispbreads or with a selection of fresh, crisp crudités.
Ingredients:
200g Barrel Aged Cheese
100g Ricotta
50g Sour Cream
Salt and Black pepper to taste
1 tsp Za'atar for serving
Sprinkling of Chives
Hot Honey:
5 tbsp Acacia Honey
1 tbsp Olive Oil
1 Minced Garlic Clove
2 tbsp Lemon Juice
1 tsp Crushed Red Chilli Flakes, more for serving

Method:
1) Ensure that the Barrel Aged cheese, ricotta, and sour cream are brought to room temperature before transferring them into a food processor and season with salt and pepper. Blend at high speed until achieving a smooth consistency, typically taking around 2-3 minutes. Taste the mixture and make any necessary adjustments to the salt and pepper levels.
2) In a saucepan, gently heat olive oil. Add the finely minced garlic and sauté over low heat until it turns tender. Turn off the heat, and then incorporate the Acacia Honey, lemon juice, and chilli flakes into the saucepan. Season this blend with salt and pepper.
3) Present this velvety mix with a drizzle of the zesty, hot honey sauce. Sprinkle the chives, za’atar, and an extra dash of freshly ground black pepper, and chilli flakes on top as garnish.
4) Enjoy this dip alongside our tasty Sourdough Crispbreads, with a crusty loaf of bread or simply with crudités.
