Elotes with St James Cheese Recipe
29 April, 2024Get ready for a mouthwatering twist on a classic! At Paxtons, we have taken the traditional Grilled Mexican Street Corn recipe and added our own special touch with the rich and creamy flavours of St James cheese. A quick and easy recipe, perfect for your bank holiday celebrations!
Ingredients:
100g St James cheese
4 corn on the cobs (or 8 halves)
2 Tablespoons mayonnaise
2 Tablespoons sour cream
Tajin or chilli powder, to taste
1 lime, quartered
Fresh chopped Coriander, for garnish, optional
Method:
- In a large pot, bring salted water to a boil over medium-high heat. Add the corn and cook until tender, approximately 10 minutes.
- If desired, brush the corn with melted butter and grill them over medium heat until slightly charred.
- In a bowl, combine the mayonnaise and Mexican sour cream, then spread a thin layer of the mixture on the corn.
- Grate your St James cheese and generously sprinkle over the corn, followed by your desired amount of chilli powder or tajin.
- Serve the corn garnished with coriander and provide lime wedges on the side for squeezing over the top.
