Graceburn Cheese on Avocado Toast

Ingredients
Serves 2
- Flax seeds for serving
- 1 avocado
- Graceburn cheese - 2/3 cubes
- Paxton & Whitfield's Plum & Habanero Jam - 2 teaspoons
- Squeeze of lemon juice
- Splash of olive oil or use the olive oil from the Graceburn.
- Salt & pepper to season
Instructions:
- Cut bread and toast to desired toasting.
- Scoop the avocado into a bowl, roughly chop or if you prefer a mashed texture, mash it further.
- Add a squeeze of lemon juice, olive oil, salt and pepper to the avocado.
- Spread 2 teaspoons of the Plum & Habanero Jam across bread, or more or less to your liking.
- Evenly spread avocado on top of the jam.
- Sprinkle over the crumbly Graceburn on top of the avocado.
- Sprinkle flaxseeds on top to finish.
