Product Details
Our Spoonable Gorgonzola Dolce is a wonderfully indulgent Italian blue cheese, selected especially for Paxton & Whitfield by the renowned Italian cheese affineurs Guffanti. Celebrated for its exceptionally soft, almost molten texture and rich, buttery flavour, this is Gorgonzola at its most luxurious. We have called it Spoonable as a nod to the Italian al cucchiaio style, meaning 'by the spoon', a fitting description for a cheese so gloriously creamy that it can be scooped rather than sliced.
Made from cow's milk in northern Italy, Gorgonzola Dolce is the sweeter, gentler member of the Gorgonzola family. Its pale ivory paste is threaded with delicate blue-green veins, which bring a pleasing savoury depth to the cheese. The flavour is beautifully balanced, with notes of sweet cream, fresh butter and a gentle, earthy tang. Despite its rich appearance, the blue character is wonderfully mellow, making it an excellent choice for those who prefer a softer, more approachable blue cheese.
Gorgonzola is made in two distinct styles. While Gorgonzola Dolce is soft, creamy and comparatively mild, Gorgonzola Piccante is matured for longer, developing a firmer, more crumbly texture and a stronger, more peppery blue flavour. Both share the same protected geographical heritage, but offer quite different experiences on the cheeseboard.
The extraordinary texture is what makes our Spoonable Gorgonzola Dolce so special. Selected for us by Guffanti, whose expertise in sourcing and maturing Italian cheeses has been passed down through five generations, this cheese has a luscious, velvety consistency. The paste is wonderfully yielding, with a melt-in-the-mouth richness that makes each spoonful particularly satisfying.
The story of Guffanti begins in 1876, when Luigi Guffanti purchased an abandoned silver mine in Valganna, northern Italy. He recognised that the mine's naturally cool, humid conditions were ideal for maturing Gorgonzola, allowing the cheeses to develop slowly in a remarkably consistent environment. What had once been a source of precious metal became a home for another of Italy's treasures. The success of his cheeses established a family business that continues to select and mature exceptional cheeses today, with its historic cellars in Arona, on the shores of Lake Maggiore.
Gorgonzola itself has an even longer history. It is believed to be one of Italy's oldest blue cheeses, with some accounts tracing its origins as far back as AD 879. Traditionally associated with the town of Gorgonzola, near Milan, the cheese was made using milk from cattle returning from their summer grazing in the Alpine pastures. Today, Gorgonzola enjoys PDO (Protected Designation of Origin) status, meaning that authentic Gorgonzola can only be produced in designated areas of Lombardy and Piedmont, according to carefully defined production standards.
Our Spoonable Gorgonzola Dolce is a splendid addition to an Italian cheeseboard, particularly when served with crisp crackers, fresh figs, ripe pears or a drizzle of honey. Its rich creaminess is also beautifully complemented by the gentle bitterness of walnuts.
In the kitchen, its melting texture makes it an excellent ingredient for sauces. Stir a spoonful through freshly cooked pasta, fold into a mushroom risotto or serve over soft polenta. It is particularly delicious with gnocchi, where its buttery richness coats each little dumpling.
For drinks, try a glass of sweet Italian wine, such as Moscato d'Asti, whose fresh fruit flavours offer a lovely contrast to the richness of the cheese. A glass of tawny Port also makes a delicious pairing.
A note on packaging: Our Spoonable Gorgonzola Dolce will arrive in a lidded tub rather than our usual waxed paper. Its wonderfully soft, flowing texture simply cannot be contained by paper wrapping! Once you've enjoyed your cheese, the tub can be washed and reused or recycled.
